Smoked Salmon with Salad or Pasta

I love this recipe because it's quick, easy, and delicious! I made it up after having something similar in Ireland. Serve over fresh spinach, salad greens, or pasta.

Ingredients

4 Tbsp. White Onion, chopped
1 Tbsp. Extra Virgin Olive Oil
1 Roma Tomato, diced (remove guts)
1 Tbsp. Cilantro, chopped
1 clove Garlic, chopped
3 oz. Smoked Salmon, shredded
2 Tbsp. Parmesan Cheese, shredded

Method

In a skillet, saute the onions with olive oil until almost soft. Add the tomato and cilantro; cook for another minute. Then add the garlic and salmon; cook an additional minute to warm the salmon and meld the flavors. Serve over fresh spinach, salad greens, or spaghetti with a little parmesan cheese sprinkled on top.
