Cauliflower, walnut and leek soup

A cream based soup with a smooth texture.

Ingredients

1 head cauliflower
1 C walnuts
2 ea leeks
1 Tbl salt
1/2 Tbl white pepper
2 Tbl dried thyme
3 Tbl oil
1 onion
2 Tbl garlic
1 qt heavy cream

Method

Clean and rough chop cauliflower, garlic, and onion.
Saute' onion and garlic in oil.
Add cauliflower and walnuts.
Add 3 qts water.
Simmer until cauliflower is tender enough to split with a fork.
Puree' mixture and return to pan.
Chop leeks and soak in water to clean.
Add leeks (NOT water) to pan.
Add cream.
Season and serve.
