Enchilada Casserole

Enchiladas in one dish and you don't have to roll anything! Recipe is easy and yummy. Even kids like it.

Ingredients

1 lb lean hamburger
1 can Ranch Style Beans
1 can Rotel
1 can Cream of Chicken or Mushroom soup
1 8 oz grated cheese, I use Colby Jack
1 small pkg tortillas, flour or corn
Spices: Chili powder, Cumin, Garlic powder, or you can use Menudo Spice Mix

Method

Brown beef and add spices to your taste. I don’t add any additional salt since the canned stuff has salt in it already.
Oil a 13x9 casserole and put in the un-drained can of beans. Put the cooked hamburger on top. Tortillas, torn into small pieces, are next. You won’t need the entire package unless you have lots to feed and you want to stretch the recipe. Put the cheese on top of the tortillas. Mix up the soup and Rotel and pour on top of all. Bake at 350 for about 45 min or until bubbly. It’s not really low fat but using the lean hamburger helps. Originally, I used 16 oz of cheese but cutting that in half didn’t seem to make much difference in flavor.
You could also add an onion to the hamburger but I don't like onions so I leave them out when possible.
