Memo's Freezer Cookies

My grandmother's cookie recipe. Eating the dough is just as good as the baked cookies!

Serves: Approx. 6 dozen cookies
Difficulty: Easy - for beginners

Ingredients

2 lbs. brown sugar
1 lb. vegetable shortening
3 eggs, beaten
2 tsp. vanilla
1/2 tsp. salt
4 tsp. baking powder
6 c. flour
1 1/2 to 2 c. pecans, chopped

Method

Cream sugar and shortening. Add beaten eggs and vanilla and mix well. Sift dry ingredients together and add to sugar mixture. Shape into rolls using wax paper and freeze. When ready to bake, cut into thin clices and back at 375 degrees for 10 minutes.
