whole wheat soft tortillas, large size
two cans light enchilada sauce
2 cups shredded cheese (your choice of cheese, I use the mexi-blend bagged shreds)
1 lb ground turkey (I suppose you could use ground chicken or beef as well)
low fat sour cream or salsa (to top)
In a large skillet, brown the ground turkey.
Drain the fat and add 1/2 can enchilada sauce and 1/2 cup cheese. Heat till cheese is melted.
Put desired amount of turkey-cheese mixture inside each tortilla and roll enchilada style (tucking each end inside the roll so the filling doesn't spill out.)
Cover the bottom of a 9x13 glass or metal baking pan with enchilada sauce.
Add the filled tortillas. Cover with remaining enchilada sauce and top with remaining cheese.
Bake until cheese is melty and delicious and the tortillas are crispy on the exposed edges (about 10 -15 min)
top with sour cream, salsa, or other desired topping
