Chocolate Pudding

1 cup sugar
1/3 cup cornstarch
4 Tbsp unsweetened cocoa powder
3 cups soymilk, or 1 can lite coconut milk plus 2 cups soymilk
1 tsp vanilla


In a medium saucepan, mix first three ingredients well. Whisk in milk slowly and heat on medium heat until boiling. Boil for 1 minute, remove from heat and stir in vanilla extract. Pour into individual serving dishes. Refrigerate until cool. If you want to serve warm, use ½ cup more cornstarch for a thicker pudding when warm.
