Vegan Banana Cake

I love the sight of bananas' going south. They wind up in this cake every time.

Ingredients

1 ripe banana
1/4 cup oil
1/2 cup soymilk
1/2 tsp vanilla
1/2 tsp lemon juice
1 1/2 cup all purpose flour
1 cup sugar
1 1/2 tsp baking powder
1/2 tsp salt
1/4 cup sugar
1/2 tsp cinnamon

Method

Preheat oven to 350 degF. In a medium bowl, mash banana well. Add next 4 ingredients and stir well. Add next 4 dry ingredients and stir gently until just mixed. Pour into a greased 8” square or round pan. Mix sugar and cinnamon in a small cup and sprinkle mixture of top of cake. Bake for 35 minutes and cool for at least 15 minutes. Cut into squares and wedges and serve warm.
