Easy, delicious enchilada recipe my mom makes.

Serves: 4 - 6
Difficulty: Easy - for beginners

1 lb of ground beef or chicken
1 can of contanida tomato paste
1 can contanida tomato sauce
1/2 teaspoon onion powder
1 pack chili mix seasoning
1 can black beans
1 package of goya rice and beans
1 package of shredded sharp cheddar
shredded lettuce
enchilada or burrito wraps (mission flour ones are good)


Cook rice and bean mix and set aside
Brown meat
Pour tomato paste and half can of tomato sauce in with meat
Add chili mix seasoning
add onion powder
Mix black beans in with rice and beans
Lay out burrito wraps and stuff them with meat/sauce mix
Layer rice and beans mix over that
Fold wraps up
Spread shredded cheese over tops of them
Pour rest of tomato sauce over top
Bake at 350 for half an hour
