Pumpkin Cake

Maybe I am not a baker, I don't know. My sister made this and it was SO GOOD. I tried it and I was not so successful. I am going to try again.

Difficulty: Easy - for beginners

Ingredients

4 eggs
1-2/3c sugar
1 c oil
1 16oz can pumpkin (2 cups)

beat well

add:

2 c flour
2 tsp baking powder
2 tsp cinnamon
1 tsp salt
1 tsp soda

beat

put in greased 9x13 pan

bake 350 degrees for 25 minutes

icing:

3 oz cream cheese
1/2 c margarine
1 tsp vanilla
2 c powdered sugar

cream together the margarine and cheese, add vanilla, add powdered sugar


frost cake when cool and top with chopped walnuts


Note from my sister:

"(I didn't add all that sugar..prob reduced it by 1/3 c or slightly more.... and reduced the oil slightly on the cake you tasted...I also used low fat cream cheese)"
