* Whisk together the Egg, Milk & Oil in a jug until frothy
* Mix together Flour, Sugar & Fruit in a large bowl, leaving a well in the centre
* Fold in the Egg mix, using as few motions as possible but ensure there's no Flour left at the bottom of the bowl
* Spoon into muffin cases
* Bake at 200C for 20mins or until springy to touch and golden brown.
* Leave to cool on a wire rack, but not too long, there's very little better than muffins still warm from the oven ;)
