Blueberry Muffins

Yummy, Fruity & Delicious. Blueberries always work, but I've done this recipe with Apple & Blackberry, Cherries and Blackberry & Raspberry (or Blaspberry for short)

You need to eat these within 24hours of them coming out of the oven (it's a hard life)

Ingredients

* 235ml Milk
* 1 Egg
* 80ml Vegetable Oil
* 8oz Self Raising Flour
* 4oz Sugar
* 4oz Fresh Blueberries

Method

* Whisk together the Egg, Milk & Oil in a jug until frothy
* Mix together Flour, Sugar & Fruit in a large bowl, leaving a well in the centre
* Fold in the Egg mix, using as few motions as possible but ensure there's no Flour left at the bottom of the bowl
* Spoon into muffin cases
* Bake at 200C for 20mins or until springy to touch and golden brown.
* Leave to cool on a wire rack, but not too long, there's very little better than muffins still warm from the oven ;)
