1/2 lb diced bacon
2 med. onions, diced
1 1/2c rice,uncooked
3 1/4c chicken broth
1 1/2c tomatoes, chopped
2 Tblsp lemon juice
1 1/2 tsp Worchestershire sauce
1 tsp salt
3/4 tsp nutmeg
1/4 tsp pepper
2 lbs. small shrimp
In medium skillet, cook bacon; drain reserving 3T grease for onions & cook.
Add rice, 2 1/4c broth, tomatoes, lemon juice, worchestershire sauce, salt, nutmeg & pepper. Bring to low simmer.
Cover & cook for 10 minutes. Stir in bacon, shrimp & remaining broth.
Continue cooking uncovered for 10 minutes. Sprinkle with parsley.
