2 lb. large red bell peppers
8 oz goat cheese
2 oz parmesan cheese, grated
fresh cilantro, chopped
Dr. Gonzo's Garlic Mash
Roast bell peppers over hot grill or under broiler until skin blisters all over. Remove from heat and seal in paper or plastic bag for 10-15 minutes. Meanwhile, mix cheeses and cilantro (works best at room temp).
Remove peel, seeds and veins from the peppers. Coat insides generously with cheese mixture. Add a liberal spoonful of Dr. Gonzo's Garlic Mash. Place in packet of tinfoil and return to grill (indirect heat) or oven to melt cheeses.
Will hold in warming state indefinitely.
