Wicked Good Shrimp and Goat Cheese Pizza - Grilled

Difficulty: Easy - for beginners

Ingredients

Marinade:
1/2 cup of Vodka (I used Absolute)
1/2 cup of Wazoo Juice

White Pizza Sauce
1/4 cup of Extra Virgin Olive Oil
2 teaspoons of Ground Ginger
2 teaspoons of Lemon Pepper
3 Tablespoons of Wazoo Juice

Pizza Crust
Your Choice, I used the Gluten Free from The Boynton (have also used a Boboli, and will soon experiment with home made)

Method

Marinade 1 pound of peeled shrimp (tails off) for between 5 and 6 hours
Grill the shrimp over "high heat", with either skewers or a grill wok
Remove the shrimp from the grill

Coat the crust with the Pizza Sauce
Add the shrimp to the crust
Add Goat Cheese to the crust (I used Crumbled Feta)

Place the crust on the grill (either Pizza stone or right on the grill) and cook over medium heat

Remove when the crust and the cheese have the right consistency (about 15 minutes)
Allow to cool, cut, serve and enjoy.

Very tasty with a nice West Coast Style IPA (not sure about the wine)
