Crystal's Best Chocolate Cupcakes. Period.

Great chocolate cupcakes are an essential. Great chocolate cupcakes that are also SUPER easy to make? A little bit of heaven, right here on earth. This recipe is courtesy of Crystal. Top these with 7-minute frosting or buttercream for a tasty treat.

Serves: 22-24 standard cupcakes

Ingredients

1 box German Chocolate cake mix
1 box instant chocolate pudding (I use Devils Food)
1 c. sour cream
1/2 cup water
1/2 vegetable oil
3 eggs
1 c. mini chocolate chips (lightly tossed in flour)

Method

Mix together first six ingredients and blend until combined. Add eggs one at a time, beating until thoroughly blended. Continue beating 1 to 2 minutes until batter is smooth. NOTE: batter will be thick. Fold in chocolate chips.

Spread batter into prepared cupcake pans or cupcake liners (Ira Garton swears by a 1/4 cup scoop, so who am I to judge). Bake at 350 for 19-23 minutes or until cupcakes spring back when touched.

Cool and frost. Enjoy!
