1 48oz can tomato puree
1 48oz can crushed tomato
1 6 oz can tomato paste
1 T dried Italian seasoning or 1/2 c fresh herb mix of basil, oregano, parsley, and chives
1 T fresh garlic, minced (approx 5-6 cloves)
1 tsp salt
1/2 tsp ground pepper
dash cayenne pepper
Mix all ingredients into a large saucepot. Bring sauce to a boil, lower the heat, and simmer for 20-30 minutes until flavors meld together.
This is a starter, suitable for all. If you want spicier, up the cayenne pepper to approx 1/2 tsp and add 1 tsp crushed red pepper and a dash of coccoa (it will make the heat stand out). You can also add a good red wine, it will make the flavors more intense. If you want a really smooth sauce, puree it in the blender or food processor when the cook time is complete.
Freezes VERY well.
