This is a classic frosting that honestly reminds me of the lightest, fluffiest marshmallow creme. In fact, we've used leftover frosting for fluffernutter sandwiches. Of all the recipes I've found, this by far is the easiest.
1 1/2 cups white sugar
1/2 cup water
2 egg whites
1/2 teaspoon salt
1 tablespoon light corn syrup
1 teaspoon vanilla extract
NOTE: If you opt to double this recipe, I recommend you simply make two individual batches. Doubling the ingredients makes for a substantially longer cooking time.
In top of double boiler with mixer at high speed, beat all ingredients about one minute.
Place over rapidly boiling water; beat at high speed until the mixture forms soft peaks. (This may take longer than 7 minutes).
Pour into large bowl; beat until the mixture is thick enough to spread.
