Blueberry lime jam

Great use of tart blueberries.

Serves: 8 x1/2 pints
Difficulty: Easy - for beginners

Preparation time:

Ingredients

4 1/2 C crushed blueberries (about 6 cups fresh)
1 T lime zest ( about 2 limes)
1/3 C lime juice
5 C sugar
2 pouches liquid pectin

Method

1) Bring first 4 ingredients to a rolling boil and keep at a boil for exacting 1 minute
2) Add pectin, turn off heat and stir
3) Ladle into clean sterile 1/2 pint jars: cap and seal
4) Process in boiling water bath for 15 minutes
