Corn fritters with salsa

Crispy corn fritters. Easy to make and great served with salsa and sour cream.

Ingredients

1 green onion
2 ears of cooked fresh corn (boiled or grilled) cut from cob
1 large egg
1/2 C. milk (rice or soy milk works fine)
1/3 C. yellow corn meal
2 1/2 T. all-purpose flour
1/4 t. salt
2-3 T. vegetable oil
Garnish with salsa and sour cream

Method

Heat the oil in a high sided skillet (cast iron works best) over medium high heat (oil should be about 350 degrees for frying). In a large mixing bowl, mix all ingredients. Spoon small dollops into the heated oil and fry until golden brown. Flip and fry another minute. Remove the fritters onto a paper towel and lightly salt immediately.
