This makes an 8x8 pan, but I just double it to make the 9x13 size and cook a bit longer....
1/2 C molasses
1 C applesauce
1 tsp cloves (ground)
1 tsp baking powder
1/2 tsp baking soda
1 3/4 C flour (ok whole wheat pastry flour, or similar)
2 tsp ginger (powder)
Preheat oven to 350 degrees F
1. Combine molasses and applesauce in a large bowl
2. combine all remaining dry ingredients and stir the mixture into the liquid * if batter seems too dry (not cake batter consistancy, add a little more water or applesauce)
3. Bake in a nonstick or sprayed pan (8x8) at 350, for 350 - 45 min or until it tests done with a fork.
let the cake cool, and enjoy... top with your favorite glaze, fruits, or ice cream.
