Country Cobbler

peach cobbler from my friend Mary Freeman --everytime I make this I think of you Mary!

Serves: 6
Difficulty: Easy - for beginners

Ingredients

1/2 c butter, softened
3/4 c sugar
1 c flour
1 1/2 tsp baking powder
1/2 tsp salt
3/4 c milk

1/3 - 1/2 c sugar
2 c blueberries or peaches ( could probably use both!)

Method

Combine butter, 3/4 cup sugar, flour, baking power, salt and milk. Blend well and pour into 1 1/2 qt casserole or 9 " sq baking pan. Combine 1/3 cup sugar (more if needed) and fruit. Pour over batter. Bake @ 375 for 40 minutes. It takes longer in a deeper pan. I had to turn up the heat to 425 after 40 minutes in the 1 1/2 qt casserole and bake an additional 10 - 15 minutes til nice and brown.
