Onion Pie

Ingredients

• 1 8” Pie crust OR Bisquick shell- see method
• Dijon style mustard
• 4 good sized yellow onions, approximately 4 cups, thinly SLICED- don’t chop them, I tried it and it changes the flavor
• 2 T vegetable oil
• 1/2 tsp sugar
• 1 T flour
• 1 1/2 cup shredded swiss cheese
• 1 1/2 cup shredded cheddar cheese
• 1 cup whole milk or 1 cup evaporated skimmed milk
• 2 eggs, slightly beaten
• 1/4 tsp salt
• dash of pepper
• dash of nutmeg

Method

• Preheat oven to 375 degrees
• Brush a thin layer of Dijon mustard over pie crust, and bake 8-10 minutes until light brown
• Saute onions and sugar in oil until onions are soft and slightly golden. Don’t burn them!
• Turn off heat and stir flour through mixture thoroughly. Add to pie shell.
• Add cheese
• Combine milk, eggs, salt and pepper. Pour over cheese and onions.
• Dust with nutmeg
• Bake for 35-40 minutes

Bisquick version
1 C Bisquick
1/2 C butter, softened
2 T boiling water

Mix bisquick and butter. Add water and mix until soft dough forms. Press into pie pan. You’ll need to bake it for 4 minutes before you can add the mustard.
