Super Awesome Curried Carrot Soup

Ingredients

3 lbs carrots
2 med leeks
4-5 stalks celery
5 C light stock
1.5 C orange juice
0.5 C coconut milk (or to taste, optional - sub cream or 1 C milk)

1 T fresh ground ginger
3 T Lee Kum Kee brand Coconut Flavored Curry ("Portuguese") Sauce (contains sugar, coconut, coriander, onion, garlic, turmeric)
2 t Madras curry powder
2 t salt (to taste)
Parsley, pepper (to taste)
Cooking oil

Method

1. Rinse and finely chop leeks. Use only the white and light green parts. (Make sure you rinse off dirt between leaves)
2. Chop celery and carrots
3. On medium, lightly saute leeks in oil/butter until cooked but not brown
4. Add in carrots, celery, stock, and orange juice
5. Add in ginger, curry powder, and curry sauce
6. Increase temperature to high, bring to a boil
7. Reduce heat to simmer, cook until carrots are tender
8. Blend the soup. IMPORTANT - make sure you do not fill the blender more than 1/3 full at a time, wrap a towel around the lid and hold down tightly, and blend on the lowest setting first.
9. Transfer back into pot and add cream/milk. IMPORTANT - do not let the soup come to boil once you have added any dairy - it will ruin the soup.
10. Add salt and pepper to taste. (To offset the sweetness of the carrots and orange juice, I like a fair amount of salt.) Garnish with parsley
