Vegan Indian Chickpeas

Ingredients

1/2 medium onion, chopped
2 Tbsp oil
3 cans chickpeas, drained and rinsed
1 can diced tomatoes (go for the fire-roasted), not drained
1 Tbsp cornstarch
1 Tbsp dried ginger, or 2 Tbsp fresh ginger, grated
2 Tbsp garam masala
1 tsp chili powder (or to taste)
1 tsp salt (or to taste)
1 Tbsp dried coriander or 1/4 cup fresh coriander, chopped

Method

Saute onion in oil over medium heat until soft, about 5 minutes. Add chickpeas and tomatoes and bring to simmer. Mix dry seasonings together (except coriander) and when chickpea mixture is just beginning to boil, add seasonings and stir frequently. Mixture will thicken. Add coriander and continue cooking 1 minute then take off heat and serve.
