1 cup Butter
8 oz. Cream Cheese, softened
1 1/2 cup Sugar (1 cup is enough, really)
2 cups Flour (1/2 whole wheat flour is nice)
1 1/2 tsp baking powder
1/2 tsp salt
2 cups fresh, frozen or dried cranberries
1/2 cup chopped nuts
Preheat over to 350 degrees.
Grease muffin tins and set aside.
In a large bowl, cream together butter, cream cheese, sugar, and vanilla. Add eggs one at a time, beating well after each addition.
Mix dry ingredients and add to wet mixture. Fold in nuts and fruit.
Spoon batter into muffin tins. Bake for 25-30 minutes.
