100 Good Cookies

For my therapy, I decided to make a batch of cookies every week
for my hubby, childre n and their hubbys. Before I got ill from this disease, I used to bake different items 2 or 3x's a day.

Serves: 100 cookies

Ingredients

1 cup sugar
1 cup brown sugar
1 cup butter (I use 2 sticks of margarine)
1 cup oil (I use veg. oil or canola oil-read your labels for the healthiest ingre.)
1 egg (Use just the egg white, its healthier with the same results)
1 teaspoon vanilla (Use generic, its cheaper, and tastes the same)
1 teaspoon cream of tartar
1 teaspoon baking soda
1 cup Rice Krispies
1 cup flaked coconut (Generic tastes the same & also cheaper w/same results)
1 cup raw oatmeal
1 cup nuts, chopped (optional) (I leave them out because I have one that dosent care for nuts)
3 1/2 cups flour (All Purpose-any brand)

Method

Mix in order given (I use my hand mixer on low first to mix everything together, then med. till everything mixes together good--its faster & easier to use a mixer) and drop by teaspoon on cookie sheet. Press down with fork. Bake at 350 F for 12-15 minutes. Makes 100 cookies
