Chocolate Mint Icing

A very minty, rich icing. This recipe makes enough to cover a 9x13 in cake.

4 tablespoons butter
2 tablespoons milk
1/2 cup packed brown sugar
1 1/2 cups icing sugar
2 tablespoons unsweetened cocoa powder
1 teaspoon vanilla extract
1 teaspoon mint extract


1. Melt butter in a sauce pan over medium heat, and mix in brown sugar until dissolved, then add milk. Bring the mixture to a boil and then remove from the heat.
2. Mix cocoa and icing sugar in a separate bowl. Add to butter and mix in.
3. Add vanilla and mint.
4. Spread immediately over cooled cake.
