3/4 C butter
2/3 C brown sugar
2/3 C white sugar
1 tsp almond extract
1/2 tsp vanilla extract
2 1/2 C white AP flour
1 tsp baking soda
1/2 tsp salt
2 C dark chocolate chips
2 lbs bacon cooked and crumbled
1/2 lb bacon (for candied bacon)
1 C brown sugar(for candied bacon)
2 C powdered sugar (for glaze)
1 Tbl Maple syrup (for glaze)
1/2 tsp vanilla (for laze)
1/2 tsp allspice (for glaze)
1/2 tsp nutmeg (for glaze)
1/2 tsp cloves (for glaze)
1/2 tsp mace (for glaze)
I like to candy the bacon while I am cooking the bacon bits.
Cut bacon for candying into 2 inch strips.
Lay strips on parchment paper.(It's well worth the $3 to but a roll of this.)
Sprinkle brown sugar evenly over strips.
Bake in 300 degree oven.
Halfway through, turn strips over getting as much of the goo on them as possible. Continue to cook until done. Watch carefully, they go from "Needs a minute or two." to "Damn, I burned them." in about 15 seconds.
Cream brown sugar,white sugar and butter until fluffy.
Add vanilla, almond, and eggs, beat until well combined.
Add flour, baking soda and salt, beat until well combined.
Add chocolate and bacon.
Refrigerate dough, 20 minutes or so is fine.
Use a scoop or spoon to place balls of dough uniformly on cookie sheet.
Bake @ 350 for around 10 minutes.
While cookies cool a little, you can mix the glaze.
Place all dry glaze ingredients into a mixing bowl.
Add liquid and beat until smooth. It should be quite thick, but if needed water (teaspoon at a time) will thin it out well.
Place a small amount of glaze on each cookie and top with a piece of candied bacon.
