Fresh Peach Tart

Ingredients

1/4 cup unbleached all purpose flour
1/2 cup whole wheat Pastry FLour (must be pastry flour)
1/2 cup almond meal
1/2 cup potato flour or white rice flour
4 TBS Buttery Spread
1 TBS Olive Oil
3 TBS Vanilla Soy Milk
1 TBS Agave Nectar
Mix well. Simply press the mix into the tart pan and make level. Fork pierce the surface and bake in 350 oven for about 20 min. or until nicely golden. Let cool and turn out onto serving plate. Top as desired. I used homemade Apricot Jam as a base and glaze for the peaches.
