Spicy Onion Ranch Bread

a hearty loaf made with ricotta, whole wheat, cornmeal, beer and lots of tasty spices - great for sandwiches, or just a little butter. The garlic-chili oil adds a real KICK!

Ingredients

1/2 c Ricotta Cheese (I used fat free)
1 extra-large egg
1/2c flat beer
2T honey
1/3c chopped scallions (white and green parts)
2T Dr. Gonzo's Dragon's Tears Garlic Chili Oil
1/2t Bacon Salt
1 Package Ranch dressing mix
4T powdered Buttermilk
2c white (unbleached) flour
3/4c plus 2T whole wheat flour
1/2c cornmeal
2t yeast

Method

Although I'm sure this could be done in an oven, i used a Toastmaster bread machine. add all the ingredients (in the order listed) to the machine, and set it on Basic White.
If you don't have a bread machine, i believe these are the steps my machine used:
Knead for 5 minutes, then again in 20 minutes. Let rise for one half hour, then punch and allow to rise again for about an hour. Bake for 40 minutes (I'm afraid i don't know what temperature, since i don't bake often, but i'd imagine you can follow instructions for baking whole wheat bread).
Suitable for vegetarians, because the Bacon Salt contains no actual bacon. :)
