Watermelon, Tomato, Basil Salad

This one is from Mark Bittman at the NY Times and it got our 2 year old who hates tomatoes to eat them blithely. Packed with vitamin C; very refreshing and light.

Ingredients

3 c cubed seedless watermelon
2 c tomato chunks
several fresh basil leaves, cut in chiffonade
4 oz feta cheese (optional)
basic vinaigrette. (In a blender, combine 1/4 c olive oil, 2 T red wine vinegar, salt and pepper.)

Method

Combine all ingredients and toss. You can substitute peach for the watermelon or the tomato. You could also substitute crumbled bacon for the feta.
