Cool Summer Salad

chilled marinated salad for hot days

Serves: 3-4

2 cups cocktail shrimp (optional)
1 cup chopped red onion
2 cups chopped tomato
2 cups chopped cucumber
1/2 bottle ofIitalian dressing
1 cup of vinegar


Add all ingredients into a bowl, mix well and put in the refrigerator. Minimum 2 hours in the refrigerator but it tastes better the next day.....

For the vegan and vegetarian option, skip the shrimp....
