2-4 fillets fish of your choice
4 large potatoes
1 yellow bell pepper
1 red bell pepper
8 green onions
16 cloves garlic
4 tbs olive oil
salt, black pepper, lemon juice
4 tbs tomato paste
Slice the potatoes, bell peppers, carrots and orange. Trim the green onions. Do NOT peel the garlic cloves, as they taste a lot beter baked in their own skin.
Spread 1 tablespoon olive oil on a baking tray. Place the fish fillets in the middle, and the sliced potatoes around the edges. Arrange the bell peppers, onions and carrots over the fish, throw in the garlic cloves, and sprinkle with the remaining olive oil, particularly on the potatoes. Sprinkle some salt, black pepper and lemon juice, then cover with the orange slices.
Bake 20 minutes in preheated oven, then pour on the tomato paste, and bake another 5-10 minutes. Try the fish with a fork to make sure it is cooked.
