Banana Bread Muffins

These turn out with a sweet crisp muffin top.

Ingredients

3 C. granulated sugar
¾ C. butter
3 eggs
6 ripe bananas, mashed
1-8 oz. carton dairy sour cream
½ t. salt
3 t. baking soda
2 t. vanilla extract
4 ½ C. all-purpose flour
1 to 2 C. nuts, chopped

Method

Pre-heat oven to 325° F. In a large mixing bowl cream together sugar and butter for 3-4 minutes; add eggs stirring after each, mashed bananas, sour cream, salt, soda, and vanilla; mix well. Add flour; mix and add nuts. Pour into paper muffin cups. Bake for 30 minutes (for normal sized muffins) or until a toothpick pulls out clean. They should have a dark golden crust on them. Remove from the oven and cool before serving. Top with cream cheese frosting, if desired. Cool completely before wrapping for storage.
