Pasta Primavera

An authentic Italian recipe passed down to me from my mother, who was a brilliant cook of Italian and English / Canadian dishes.

Ingredients

2 garlic cloves; crushed
small handful of finely chopped parsley
handful of chopped spinach & radicchio
1 finely chopped onion
1 finely chopped green pepper
1 finely chopped carrot
½ cup sliced mushrooms
2 diced tomatoes
½ cup 35% cream
splash of white wine
cooking oil
salt, pepper & chili pepper to taste

Method

Add to lightly oiled pan; chopped onion, green pepper & carrot; sauté for 2 to 3 minutes. Add mushrooms, tomatoes, crushed garlic & parsley; sauté for 2 to 3 minutes. Add chopped radicchio & spinach; season with salt, pepper & chili pepper. Add a splash of white wine; sauté for 2 to 3 minutes. Stir in a ½ cup of 35% cream. Simmer on low heat. Add to cooked pasta.
