Wendy's Louisiana Red Beans and Rice

Wendy is from New Orleans and makes this for her family several times a month. Simple!

Ingredients

1 lb dried red kidney beans
1 lb sausage or ham, cut in bite sized pieces
1 onion, chopped
Cajun seasoning such as Tony Cachere's or Zatarain's
water
Cooked rice

Method

1. Soak dried beans in water overnight. In the morning, drain and assemble in a crock pot.
2. Place beans, onion, sausage or ham, and Cajun seasoning in crock pot. Put in enough water to cover contents by about 3 inches.
3. Turn crock pot to low and let cook for 8 to 10 hours.
4. Serve over cooked rice.
