1 tbsp. vegetable oil
4 boneless, skinless chicken breast halves
1 can chicken broth
3/4 cup orange juice
1 medium onion chopped
1 cup uncooked regular long grain rice
1 1/2 cups fresh or frozen green beans
1 tsp. grated oange peel
3 tbsp. fresh parsley
1. Heat oil at medium high in large skillet. Add chicken and cook until browned, set chicken aside.
2. Stir in broth, orange juice and onion. Heat to a boil. Stir in rice, beans and orange peel; reduce heat to low. Cover and cook- about 10 minutes. Return chicken to skillet.
3. Simmer covered until chicken is cooked and rice has absorbed most of the liquid. Remove chicken to platter, stir parsley into rice. If desired, garnish with orange peel.
