Avocado Fruit Salad

Difficulty: Easy - for beginners

Ingredients

1 ripe avocado, peeled, pitted, and cubed
4 tart apples (Granny Smith) peeled, cored, and cubed
2 ripe nectarines (or peaches), pitted and cubed (If using peaches, blanch first so skin removes easily)
1/2 grapefruit, peeled and cut into sections, then into bite sized pieces
1 tbsp Honey
1 tbsp. lemon juice
1 tbsp. pecans, toasted and chopped
lettuce leaves to cover four plates

Method

1. Gently toss together the avocado, apples, nectarines and grapefruit
2. Drizzle honey and lemon juice over fruit and toss again, lightly
3. Place lettuce on plates, divide fruit between plates. Garnish with pecans.
