Ingredients
3/4 cup canola oil
1/4 cup fancy molasses
1 1/2 cups granulated sugar
4 eggs
2 cups all purpose flour
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
3 cups peeled, grated carrots
3/4 chopped walnuts or pecans
ICING
1 cup spreadable cream cheese
1/2 butter
4 cups icing sugar, sifted
2 tsp. vanilla
Method
1. Preheat oven to 325*F.
2. Beat first 4 ingredients together in large bowl until smoothly blended. Combine flour, baking soda, cinnamon and salt. Add to egg mixture, beating until smooth. Stir in carrots and nuts. Spread in greased pan.
3. Bake for 1 1/4 to 1 1/2 hours, or until toothpick inserted in center comes out clean.
4. Cool 15 minutes in pan, then remove to rack and cool completely.
5. To make icing beat cheese and butter until smooth. Gradually add icing sugar, beating constantly. Mix in vanilla. Spread on cooled cake.
