2 large skinless chicken breasts
.33 c. shredded Parmesan cheese
.25 c. of bread crumbs or crushed up corn flakes/bran flakes
2 T. parsley
1 egg white
2 tsp. Dijon mustard
1 T. olive oil
salt, pepper, basil, chili to the bread crumb coating can add flavour if you like :)
On a large plate mix together bread crumbs/crushed cereal, cheese, parsley--spices to taste.
In a shallow bowl mix together egg white and mustard
Coat chicken breast in egg white mixture
Then coat with bread crumb/cereal mixture
Place in a frying pan with olive oil that is heated
Fry over medium heat for 8-10 minutes on each side...until chicken is no longer pink inside.
