1 8oz package cream cheese (softened)
1/2 cup vegetable oil
1 yellow cake mix
1 3oz instant vanilla pudding mix
4 eggs, beaten
2 Tsp vanilla
2 cups fresh blueberries (one box of fresh berries was enough)
powdered sugar to top
1. Preheat oven to 325F Spray a bundt pan or 9 inch tube pan with nonstick cooking spray and dust with flour.
2. Combine cream cheese and oil in a medium sized bowl, beat until smooth and creamy. Add cake mix, pudding mix, eggs and vanilla. Beat until blended.
Fold in the berries (the batter will be thick) Spoon batter into the prepared pan.
3. Bake for 60 minutes or until a wooden tooth pick stuck in the middle comes out clean. Cool cake in pan on a wire rack for 20 minutes. Remove from pan to finish cooling.
4. Sprinkle with powdered sugar before serving.
