
stuffed peppers

Ingredients
2 eggs
1 1/2 pounds ground round (or turkey)
breadcrumbs 1 cup
8 Oz fresh mushrooms chopped
1 1/2 tablespoon bbq sauce
1/4 chopped walnuts
two pinches of sage
1 pinch of thyme
Olive oil (enough to moisten while mixing)
1 Tablespoon onion powder
2 chopped garlic cloves
Method
Mixing the eggs (2) with the beef (1 1/2 pounds) until combined, add 1 cup breadcrumbs and 8 Oz of mushrooms (chopped roughly to 1/4 inch). Add olive oil until moistened enough to get the hands ichy. Add the nuts(1/4 cup chopped eighth to quarter inch size approx), garlic (minced), two pinches of sage, one pinch of thyme, and a tablespoon of garlic powder.
Spoon it all into a hollowed pepper and top with a few slices of the mushrooms for decoration. place in baking dish, cover with foil, and bake, at 375 for 45 min.
Do not pack them too tightly, or they will split.
once done, plate em up, and grind a little pepper on top to take the sheen off. Of course, it adds flavor as well.
