2 pounds ground bison
1½ cups instant oatmeal
1 jar roasted red pepper pasta sauce
1 chicken egg
2 ounces Madeira
1 red onion, minced
1 large carrot, grated
1 anaheim pepper, diced
10 sprigs fresh oregano, crumbled
⅓ bulb garlic, diced
mixed peppercorns, grinded
1 oz. Louisiana hot sauce or ½ fresh cayenne pepper, minced
1. In a large bowl, mix all ingredients together. Add more oatmeal if the mixture is too watery.
2. Put mixture into a glass casserole dish that has been coated with Pam or olive oil.
3. Bake in a 300°F oven for 45-50 minutes or until internal temperature reaches 160°F.
4. Let cool 5 minutes and serve.
