Banana Bread (with or without nuts and or chocolate chips)

Banana Bread!

Ingredients

3 ripe bananas, well-mashed
2 eggs, beaten until light.
2 c. flour (unbleached is best)
3/4 c. sugar
1 tsp. salt
1 tsp. baking soda

Method

Mix in a bowl the mashed bananas and the well beaten eggs.
Sift in a separate bowl all dry ingredients
Add the dry to the first mixture, Add 1/2 c. chopped nuts and or unsweetened chocolate chips if desired.
Stir well. Put in a buttered loaf pan (9 x 5") or you can make muffin cups (fill 3/4 full and fill the empty ones with water 3/4 full for even cooking). Bake 1 hour at 350 F. (190 C.). I like to dot the top with butter :). Again,
test for doneness with a toothpick!
