Boil plenty of water and cook pasta till a la dente.
In large frying pan melt butter and olive oil. Add chopped onion and minced garlic and cook till onions are translucent. Quarter drained Artichokes and add to pan. Reduce heat and let simmer till the Artichokes are light brown.
Lightly beat three eggs with and add to a large serving bowl. Add Artichoke mixture. Add drained pasta. Toss. Add Parmesan Cheese. Toss again and Serve!
