Mock Waldorf Salad

Ingredients

One apple, red-skinned (Gala is my favorite)
Two hefty celery stalks
Juice of 1/2 lemon
Stevia or other no-calorie sweetener to taste (optional)


Method

Core apple and cut up into approx. 1/4" dice, skin on
Take off the tough strings from the back of the celery stalks, then cut each down the center lengthwise, and then into approx. 1/4" dice.

In a small bowl, juice 1/2 lemon and add the sweetener as you like.

This is very tasty. A nice crunch, and can eat as a side dish, or even a meal.

Uses One vegetable, one fruit, and 1/2 of allowed lemon juice for the day.
