Black Bean and Corn Salad

Great as a salad or with tortilla chips.

Serves: 4-5
Difficulty: Easy - for beginners

Ingredients

1 can rinsed and drained black beans
1 1/2 cup corn
1/2 cup chopped orange pepper
1/2 cup chopped english cucumber
1/2 cup chopped sweet onion
2-3 chopped roma tomatoes
1/4 cup chopped cilantro
1 avacado

Dressing

Juice from two small limes
1/3 cup olive oil
2 tsp chilli powder
1 crushed garlic clove
salt to taste

Method

Mix all ingredients in large bowl. Dressing: wisk together lime juice, olive oil, chilli powder, garlic and salt. Pour over salad and stir well.
