Creme de Menthe Brownies

Heavenly little bars of chocolate and mint .... what could be better???? Happy St. Patrick's Day!

Serves: depends on how big you cut them!

Ingredients

Brownie layer:

1/2 cup softened butter
1 cup sugar
4 eggs, beaten
1 tsp. vanilla
1/2 tsp. salt
1 cup flour
1 can Hershey syrup

Mint filling:

1/2 cup softened butter
2 cups confectioners' sugar
2 TB green Creme de Menthe

Chocolate glaze:

1 (6 oz.) pkg. semi-sweet chocolate chips
6 oz. melted butter

Method

Preheat oven to 350 degrees.

Brownie layer: Cream butter and sugar until smooth. Add beaten eggs, one at a time, mix thoroughly. Add vanilla, salt and flour. Mix until well blended. Add Hershey syrup. Mix well. Pour into greased 9" x 13" baking pan. Baking for 20 - 30 minutes Cool completely.

Mint filling: Use electric mixer for adequate consistency. Cream butter and confectioners' sugar until smooth, adding small amount of milk if needed. Add creme de menthe and mix thoroughly until spreading consistency. Frost cooled brownie layer with the mint filling. Refrigerate 20 - 30 minutes to harden the mint filling.

Chocolate glaze: Melt butter and chocolate chips over low heat, stirring constantly until smooth. Cool to room temperature. Spread over the mint filling, covering entire layer. Cool until glaze hardens.

To serve: Score with sharp knife to prevent cracking the glaze. Cut carefully into 1" squares (they are so rich you can't eat more than that at a time!). These brownies should be refrigerated if not eaten at once. Can be frozen as well.
