Irish Stew

This recipes calls for mutton, but I used lamb.

Difficulty: Easy - for beginners

Ingredients

4 cups water
1 lb. diced/chopped mutton
4 med size carrots
2 med size onions
1 tbsp parsley
5 med size potatoes
1 pint stock
black pepper

Method

1. Boil the mutton for about 1 hour in 4 cups water.

2. Strain off most of the fat.

3. Chop the vegetables to spoon size.

4. Put all ingredients in a big pot including the stock. Bring to boil. Simmer for 1 1/2 hours.
