Creole recipe version of one we love, ctsy Dave Poe

Ingredients

4 bell peppers, halved
2T olive oil
1 onion diced
1 can diced tomatoes
2 cans black eyed peas (drained)
2 jalapenos
1C Carrots diced
2 clove chopped garlic
1t oregano, basil, thyme, salt
2t paprika

Method

boil peppers 5 minutes to soften, drain & rinse to cool.
Saute onions, jalapenos & carrots (brown, not steam) ~5 min
Add garlic, saute 5 more minutes.
Add herbs, cook a minute, then
add tomatoes and peas, stir, cover and simmer for 10'
Fill peppers, bake 350 for 25 min.
