Easy Greek Style Spinach Quiche

A simple and delicious recipe to satisfy your craving for traditional Spanokapita (Greek Spinach Pie)

Ingredients

1 unbaked pie crust
1 pkg. frozen chopped spinach
1/2 cup chopped onion
1/2 cup chopped celery
1/2 stick butter or margarine
1/2 - 2/3 cup crumbled feta cheese (enough to evenly cover bottom of pie crust)
1 cup grated Swiss cheese
1 tsp. dillweed (or to taste)
2 eggs, beaten
1 cup milk
1 tsp. salt
1/2 tsp. pepper
1/4 tsp. nutmeg

Method

Prepare spinach according to package directions. Squeeze dry.
Saute onion and celery in butter until soft.
Add onion/celery mixture, dillweed and swiss cheese to spinach and set aside.
Sprinkle feta cheese in bottom of pie crust. Top with spinach mixture.
Beat together eggs, milk, salt, pepper and nutmeg. Pour evenly over spinach mixture.
Bake @ 350 degrees for 45 minutes or until knife inserted in center comes out clean. Let stand for approximately 5-10 minutes before slicing.
